Spiced kofta wrapped in aubergine slices slowly baked in a rich tomato sauce with pomegranate molasses. Served with a quinoa-rice side.

In the Microwave (900W): Heat kofta for 1:30-2 min. Add rice & quinoa and heat for another minute. Timings vary depending on your appliance.
On the hob: Empty content into pan. Cover it and simmer for 5-6 min, stirring occasionally. Add rice & quinoa to another saucepan along with a splash of water. Stir occasionally until warmed through.
