Stuffed aubergines with spiced beef and pine nuts slowly baked in tomato sauce. Mama serves with a side of vermicelli rice.

In the Microwave (900W): Heat aubergines for 2 min. Add vermicelli rice and heat for another minute. Timings vary depending on your appliance.
On the hob: Empty aubergines into pan. Cover it and simmer for 5-6 min, stirring occasionally. Add rice to another saucepan along with a splash of water. Stir occasionally until warmed through.
